As I’ve shared in the last blog post, the past few months have involved a lot of shifts in my diet: keeping vegan + gluten-free eating as the anchor, but eliminating refined sugars and, at least for the time being, eating only cooked and pureed foods.
This shift has me making smoothies every day, and one I’ve particularly enjoyed is this spirulina shake.
It’s sweet, so it satisfies cravings.
It’s simple, so I don’t have to follow instructions.
It’s satisfying, so I feel fulfilled (not like I’m giving something up to make dietary changes).
It’s also green, green, green. Bright neon green, as the photo shows. So, it always makes me smile.
Plus, I feel good about eating extra greens (spirulina, spinach, and sometimes mint). It’s part of self-parenting (more than simply self-care), and it’s “fuel for the road ahead.”
Spirulina Shake
5 basic ingredients:
Spirulina ~ 2 teaspoons
Spinach ~ 1 cup
Banana ~ 1 banana (fresh or frozen)
Dates ~ 2-3 fresh, pitted dates
Unsweetened almond milk ~ up to 4 cups
Optional add-ins:
Hemp hearts ~ up to 1 tablespoon
Peppermint extract ~ a few drops
Fresh mint leaves ~ a few (to taste)
Instructions:
Put all ingredients into a Vitamix or other high-powered blender.
Blend on high until thoroughly pureed.
Enjoy!
